Microwave Bread and Butter Pudding
If like me, your oven is bust, give this microwave recipe a go. It turns out just as nice, I promise.

Serves 4.
Ingredients
Six slices of toast, buttered
2 eggs
1 tsp vanilla or almond essence
1 tablespoon of caster sugar
Half a pint of milk
Currants/Raisins/Sultanas
A greased pie dish
Method
1. Cut the toast into triangles and use some to line the pie dish.
2. Layer toast and raisins until all the toast has been used.
3. Add the essence to the milk and heat for a minute on full power, so that it’s warm but not very hot.
4. Beat the two eggs with the caster sugar.
5. While mixing, pour the egg mixture into the warm milk.
6. Pour this mixture into the pie dish. It will be pretty soggy.
7. Cook for 12 minutes on Power 4/Warm, and then stand for 5 minutes.
8. Serve hot with custard and enjoy!
I know it’s unseasonal of me to post this here now, but it’s just so delicious, I had to share.
